Traditionally, mochi was made from whole rice, in a labor-intensive process. The traditional mochi-pounding ceremony in Japan is mochitsuki: Polished glutinous rice is soaked overnight and steamed. The steamed rice is mashed and pounded with wooden mallets (kine) in a traditional mortar (usu).

I love mochi ice cream. But did you know that mochi actually doesn't have ice cream, it actually has red bean paste. Chefs take hours and hours to make a good mochi. It's considered a very well regarded skill among the Japanese to make good mochi.
